Ammu got upset with Margaret for her thinking that woman sniff each other's hands. She didn't like the thought that Margaret was looking down upon them. That what they do is so odd, and terrible compared to her "white" greetings. Ammu was sticking up for her race and family and being an Indian woman. Though i do agree that it was a little out of line at that certain moment. I think that Ammu had every right to show her authority as well.
