I think that Sophie Mol is so interesting to Estha, Rahel and the rest of the family mostly because she is foreign and mysterious. I don't think it gets too much deeper than that.
Sometimes I get the feeling that even though sometimes she is a bit of a brat, Ammu wishes that Rahel was more like her. I think she feels this way out of love, however. Sophie Mol (before she dies, that is) is privileged and white, and has a great future laid out for her, and I think Ammu wishes that Rahel could be that way too.
